Again, I co-authored this book with Sahil Malik who is our Lead Author for this book and is my second association with him - the first being Pro SharePoint 2010 Business Intelligence Solutions (http://tinyurl.com/2eey73u). 

This book has 4 chapters and covers topics related to Migration from MOSS 2007 to SharePoint 2010 keeping in mind all different users such as IT Pros, Designers and Developers (each one of the users has exclusively 1 chapter). It explains different upgrade approaches, best practices, what's new for developers and designers etc.

Reading it now...

...got the book yesterday.  So far I'm up to page 12. 

The part of our migration that's scaring me the most is that we may also be moving off a hosted solution to one we host ourselves at the same time as we migrate.  Somehow we've got to bring about 300 users off one AD domain and onto another without either domain ever being on the same network, all without breaking the security (and the many 'People/Group' list fields).

Stephen,

once you perform database detach model, you can run the migrate user command from stsadm to migrate your old AD user to the new AD or a different AD. All groups, users can be changed to the new membership as well. You can also write a powershell script to do the same.
